Direction
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 7 to 10 minutes. Drain excess grease.
- Stir in the taco seasoning mix and water. Simmer for 3 to 5 minutes until the sauce has thickened and coated the meat. Remove from heat.
- To build the foundation: Spread a layer rice on a large round serving platter.
- Dollop spoonfuls of the warm pinto beans over the rice (this acts as “glue” to hold the mountain together), followed by a layer of the seasoned beef and a generous sprinkle of shredded cheese.
