Queso Dip
This velvety smooth white cheese dip tastes just like the kind served at your favorite Mexican restaurant.

Ingredients
- 1 pound white American cheese, cubed (purchased from the deli counter, not processed singles)
- 1/2 cup half-and-half (or whole milk)
- 2 tablespoons butter
- 1 (4 ounce) can diced green chiles, undrained
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 pinch cayenne pepper, or to taste
- 1 tablespoon pickled jalapeño juice (optional, for extra tang)
- Chopped fresh cilantro, for garnish
Directions
- Place a medium saucepan over medium-low heat. Add the butter, half-and-half, and undrained green chiles. Stir until the butter is melted and the mixture is warm.
- Gradually add the cubed white American cheese, a handful at a time, whisking constantly until each batch is fully melted before adding the next. Do not rush this step, or the cheese may separate.
- Once all the cheese is incorporated and smooth, stir in the cumin, garlic powder, onion powder, cayenne pepper, and jalapeño juice (if using).
- Reduce heat to low and simmer for 2 to 3 minutes, stirring frequently to prevent scorching on the bottom. If the dip is too thick for your liking, stir in an extra splash of milk to reach desired consistency.
- Remove from heat, transfer to a serving bowl, garnish with fresh chopped cilantro, and serve immediately with warm tortilla chips.
Optional Tips / Variations
- The Cheese Matters: Do not use pre-packaged “singles” or shredded cheese with anti-caking agents. Buying a block of high-quality White American cheese (like Boar’s Head or Land O’Lakes) from the deli counter is the secret to the perfect texture.
- Queso con Carne: Stir in 1/2 pound of cooked ground beef or spicy Mexican chorizo after the cheese has melted for a heartier dip.
- Slow Cooker Method: Combine all ingredients in a small slow cooker. Cover and cook on Low for 1-2 hours, stirring every 20 minutes until melted and smooth. Keep on the “Warm” setting for parties.
