Ingredients
- 12 fresh jalapeño peppers, approximately 3 to 4 inches long
- 1 (8 ounce) package cream cheese, softened
- 1 cup shredded sharp Cheddar cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 12 slices bacon, cut in half crosswise
- 24 toothpicks
Directions
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and place a wire rack on top to allow air to circulate around the bacon.
- Wearing kitchen gloves (highly recommended), slice the jalapeños in half lengthwise. Use a spoon to scrape out the seeds and white membranes to reduce the heat.
- In a medium bowl, mix the softened cream cheese, shredded Cheddar cheese, garlic powder, and onion powder until well blended.
- Fill each jalapeño half with the cheese mixture, smoothing it out so it is level with the edges of the pepper (do not overfill).
- Wrap one half-slice of bacon around each stuffed pepper half, stretching slightly to cover as much of the cheese as possible. Secure the bacon end with a toothpick.
- Arrange the poppers on the prepared wire rack.
- Bake in the preheated oven for 20 to 25 minutes, or until the bacon is crispy and the peppers are tender.
- Remove from the oven and let cool for 5 minutes before serving, as the filling will be very hot.
