  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups water or chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 2 bay leaves
  • 1 teaspoon hot sauce (optional)
  • 2 cups cooked white rice
  • 2 green onions, sliced (for garnish)

• Directions

  1. Soak red beans overnight in water, then drain and rinse before cooking.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced sausage and cook until browned; remove and set aside.
  3. In the same pot, sauté onion, bell pepper, and celery for 5–7 minutes until softened.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Stir in soaked beans, cooked sausage, water or broth, Cajun seasoning, thyme, paprika, black pepper, salt, bay leaves, and hot sauce.
  6. Bring mixture to a boil, then reduce heat to low and simmer uncovered for 1½ hours, stirring occasionally.
  7. Mash a small portion of the beans against the side of the pot to naturally thicken the mixture.
  8. Continue simmering until beans are tender and creamy. Remove bay leaves before serving.
  9. Serve hot over cooked white rice and garnish with sliced green onions.
