Ingredients
- 2 lbs grass-fed ground beef (85% lean)
- 3/4 cup almond flour
- 2 large eggs, beaten
- 1 small onion, finely minced
- 2 cloves garlic, minced
- 1/2 cup finely chopped carrots
- 1/4 cup fresh parsley, chopped
- 1 tbsp coconut aminos
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- For the Glaze:
- 1/2 cup tomato paste (no sugar added)
- 2 tbsp apple cider vinegar
- 1 tbsp raw honey or maple syrup
- 1/2 tsp garlic powder
Directions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with avocado oil or line it with parchment paper.
- In a small bowl, whisk together the tomato paste, apple cider vinegar, honey, and garlic powder to create the glaze; set aside.
- In a large mixing bowl, combine the ground beef, almond flour, eggs, onion, garlic, carrots, parsley, coconut aminos, thyme, salt, and pepper.
- Use your hands to mix until just combined—be careful not to overwork the meat, or it will become tough.
- Transfer the meat mixture to the prepared loaf pan and shape it into an even loaf.
- Spread half of the prepared glaze evenly over the top of the meatloaf.
- Bake for 45 minutes, then remove from the oven and spread the remaining glaze over the top.
- Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing to ensure it stays juicy and holds its shape.
Optional Tips / Variations
- Hidden Veggies: Finely pulse mushrooms in a food processor and add them to the meat mixture for extra moisture and umami flavor.
- Smoky Flavor: Add 1/2 teaspoon of smoked paprika to the glaze or a drop of liquid smoke to the meat mixture.
- Muffin Tin Style: For quicker cooking and built-in portion control, bake the mixture in a greased muffin tin for 20–25 minutes.
