Ingredients:
- 3 pounds corned beef brisket with spice packet
- 10 small red potatoes, halved
- 5 carrots, peeled and cut into 3-inch pieces
- 1 large onion, peeled and quartered
- 1 head cabbage, cut into wedges
- 4 cups water (or enough to cover meat)
Directions:
- Place corned beef in a large pot or Dutch oven. Add water to cover and the included spice packet.
- Bring to a boil, then reduce heat to a simmer. Cover and cook for about 2½ to 3 hours, or until the meat is tender.
- Add potatoes, carrots, and onion to the pot. Cook until vegetables are just tender, about 20 minutes.
- Add cabbage and cook until softened but not mushy, another 15 minutes.
- Remove corned beef, slice across the grain, and serve hot with vegetables and broth.
